Holly and Heather’s Helpful Hint: Make Cookies!
This time of year we truly try to slow down every now and again and savor all that this season brings. One of our favorite things to do during Christmas time is bake cookies. The aroma in the house and that delicious bite of a cookie are something everyone can enjoy. What memories and traditions are being made in the process! We have done all sorts of baking during the holiday season from lemon squares to fudge, spice cake, peach cobbler and cheesecake. Here are two cookie recipes we are making this weekend for a big cookie swap. Enjoy!
Peanut Butter Cookies
1 cup peanut butter, 1 cup packed brown sugar, 1 egg
Using a mixer combine all 3 ingredients. Shape into 24 balls. Place 2 inches apart on a cookie sheet in a 350 degree pre-heated oven for 10-12 minutes. Transfer to a wire rack or plate to cool and dig in! Optional: When out of the oven and still warm, press a few chocolate chips into each cookie.
Chocolate Peanut Butter Squares
2 cups chocolate chips, 1/2 cup creamy peanut butter, 1 1/2 sticks of softened butter, 1 cup chunky peanut butter, 2 cups powdered sugar, 1 box of vanilla wafer cookies crushed, 12 ounces mini chocolate chips
Melt the 2 cups of chocolate chips and creamy peanut butter in the microwave. Set aside. Mix the butter and chunky peanut butter until smooth. Slowly stir in the powdered sugar. Add the crushed vanilla wafers and mini chocolate chips. Spread into a well-greased 9×13 pan. Pour the melted chocolate/peanut butter mixture on top. Refrigerate for 1-2 hours then cut into squares and enjoy!
