Holly & Heather’s Helpful Hint: Romanesco
As a follow-up to last week’s vegetable post on the futsu squash, here’s another odd-looking, unfamiliar sounding vegetable – romanesco. Also called romanesco cauliflower or Romanesque broccoli, it has a slightly milder flavor than cauliflower and roasts beautifully. Who would’ve known there were so many vegetables out there we’ve never heard of or seen before, let alone cooked or eaten? These farm shares are so much fun & educational!
Here’s what the romanesco looked like raw –
And here it is after it was roasted with some collard and cauliflower –
Just wash and chop up veggies, spread out on a baking sheet, coat with a little avocado oil, salt and pepper and bake in 350 degree oven for about 30 minutes, turning once halfway thru cooking.
